Popular Bayside steakhouse ordered shut again

Roach infestation among violations reported by state inspectors

State records show The Knife in Bayside was ordered shut again last week due to a roach infestation. Records show the same restaurant was ordered shut in May of 2012 due to a rodent issue.

A total of 6 restaurants were ordered shut last week by the Florida Department of Business Regulation. Below is a list and some of the violations cited.

"Roach activity present as evidenced by live roaches found. 20 plus live roaches under the the bread oven stand in the kitchen. 5 inside the cooking a range oven that is not in use located in the kitchen next to the bread oven. Accumulation of black/green mold-like substance in the interior of the ice machine. Potentially hazardous (time/temperature control for safety) hot held at less than 135 degrees Fahrenheit or above. Beef 129°f."

Dead roaches on premises. 50 plus dead roaches found 20 dead roaches along the wall on the floor in the kitchen/ prep area , 10 dead roaches dish room area and 20 dead roaches dry storage area. Accumulation of black/green mold-like substance in the interior of the ice machine."

OBSERVED AT LEAST 10 ROACHES ON DRY STORAGE SHELVES WITH 30-40 ROACH DROPPINGS. Certified Food Manager or person in charge lacks knowledge of food borne illnesses and symptoms of illness that would prevent an employee from working with food, clean equipment and utensils, and single-service items.
