Vegan French toast
This recipe is vegan as long as the bread you use is vegan. You can use any bread you like, though, if that's not a concern! It's egg- and dairy-free and tastes great!
1 cup vanilla soy milk (or Silk Nog, if it's available, around the winter holidays)
2 Tbsp all-purpose flour
1 Tbsp sugar
1 Tbsp nutritional yeast
1 tsp cinnamon
Dash of vanilla extract (optional)
4 bread slices (preferably baguette or another type of hearty, crusty bread)
Whisk first six ingredients together, and let rest for a few minutes while you heat up a lightly greased skillet. The skillet is ready when you flick a drop of water on it, and it skitters across the surface.
Dip bread slices in mixture, coating both sides, and lay on skillet. Flip the toast when it is lightly browned, and brown other side.
Serve with maple syrup, butter/margarine and cinnamon. It's also great topped with homemade jam or preserves!
