Dutch baby pancakes
1/3 cup AP flour
1/2 cup whole milk
2 large eggs, room temperature
Pinch of salt
4 tablespoons butter
2 tablespoons powdered sugar
1 lemon, cut into wedges
Beat the eggs with an electric mixer on medium high until pale and frothy. Beat in the milk, flour and salt.
Heat your oven to 425 degrees Fahrenheit. Melt the butter in an 8-inch cast iron pan over medium high. Slowly and carefully, pour the mixture into the pan. Place the pan into the oven and cook until golden brown, about 12-15 minutes.
Sprinkle with the powdered sugar, and squeeze a little lemon juice on top.
Serve with mixed berries, if desired.
