Fig Clafoutis


1¼ cups milk
3 eggs
½ cup sugar
1 teaspoon vanilla
2 tablespoons butter, melted
½ cup AP flour
1 pound figs
2 tablespoons sugar

Whisk together the milk, eggs, sugar, vanilla and butter until well combined. Stir in the flour until mixed.

Meanwhile, halve the figs from stem to base and toss them with the 2 tablespoons sugar to evenly coat them.

Pour the batter into an 8x8 inch baking dish. Place figs, cut side up, into the baking dish lightly pressing them into the batter. Place the figs as close together as possible, covering the entire top of the dish.

Bake at 375 degrees for about 25 minutes or until set and a skewer inserted into the center comes out clean.
