Seared shrimp with avocado and grapefruit butter

Ingredients:

2 tablespoons olive oil

Royal Red shrimp heads off, peeled and deveined

Avocado (from Florida, if available)

Salt and pepper

Directions:

Heat the shallots and wine, reduce by half.  Add the grapefruit juice, reduce by 1/3. Add the lime, honey and heat through. add the butter whisking. Add the salt.

Spoon the sauce over the shrimp. Top with chives.

Sauce:

1 tablespoon shallots

¼ cup dry white wine

½ cup grapefruit juice

Juice of 1 lime

1 tablespoon honey

3 tablespoons butter

2 tablespoons chives, sliced thin
