Banana Split

Your favorite ice cream flavors
Hot fudge (recipe follows)
Bananas (I like manzano bananas)
Whipped cream
Amarena cherries
Frosted flakes
Candied Almonds (recipe follows)

Hot fudge
2 tablespoons sugar
3 tablespoons light brown sugar
3 tablespoons cocoa powder
Pinch of salt
1 tablespoon light corn syrup
1 cup heavy cream
¾ cup bittersweet chocolate
½ teaspoon vanilla extract
Heat the sugar, brown sugar, cocoa powder, salt, corn syrup and cream together, and whisk until smooth.  Bring to a boil over high heat for a few seconds.  Remove from the heat and whisk in the vanilla and chocolate.

Candied Almonds
½ cup water
¾ cup sugar
¼ cup brown sugar
1 teaspoon ground cinnamon
Pinch of salt
2 cups raw almonds with skin

Line rimmed cookie sheet with a Silpat or parchment paper; set aside.

Add the water to a sauce pan.  Add the sugar, brown sugar, cinnamon, salt.  Begin heating the mixture and allow it to come to a boil, add the almonds.  Stir to coat evenly.  Continue to cook over medium heat, stirring while the liquid thickens, about 10 minutes.  The liquid will turn flaky and crystallized.  Pour out onto the cookie sheet and allow to cool.

Scoop your ice cream choices over some bananas; top with all the goodies you like!
