My favorite burger

Recipe by Chef Michelle Bernstein

16 ounces ground beef (I love brisket combined with sirloin)
Separate into 4 ounce patties, 2 per person
8 slices American cheese

Heat a grill pan over medium heat.  Cook the burgers until browned, about for 2-3.  Flip the burger and cook for 1-2 more minutes.  Top each patty with a slice of cheese and cover the pan briefly to melt the cheese.

Michelle’s Special Sauce:
1 cup mayonnaise
¼ cup ketchup
1 tablespoon Dijon mustard
2 tablespoons 1/8 inch diced dill pickles
1 tablespoon adobo from chipotles
Salt

Mix all ingredients together.

Garnish
Brioche bun, toasted with a little butter
Bread and butter pickles
Lettuce
Tomatoes
Onion rings, recipe follows

Onion Rings
2 yellow onions cut into ¼ inch rings
Buttermilk for dipping
2 cups AP flour
1 teaspoon cayenne
1 teaspoon chili powder
Oil for frying
Salt

Place the sliced onions into the buttermilk.  Whisk together the AP flour, cayenne and chili powder, season with salt.  Dredge the soaked onions in the flour.  Fry into 350°F oil until golden brown and crispy.  Drain on paper towels and season with salt while warm.

To serve the burgers, spread special sauce on both sides of a toasted bun.  Top the bottom bun with a patty, 2-3 pickles and another patty.  Top with a few more pickles, 2-3 onion rings, lettuce, tomato and the top bun.
