New York Breakfast Sandwich


4 slices of Pullman or Challah or brioche

8 slices of bacon, cooked on a cookie sheet topped with another cookie sheet and placed in 350°F for 20-30 minutes, check after 10 minutes.

2 tablespoons butter

4 slices American cheese

4 eggs

Ketchup (desired amount)


Toast the bread in a toaster (or oven like I did)

Heat the butter in a nonstick pan over medium until it foams; add the eggs, cook until the white is almost cooked through then top with cheese and allow to melt.

Add ketchup to the bread.

Top with the eggs and cheese then top with bacon, another slice of bread and serve.
