Build Your Own Tacos


1 pound ground beef (90/10)
¼ teaspoon onion powder
¼ teaspoon garlic powder
¼ teaspoon cumin
¼ teaspoon chili powder
1 heaping tablespoon tomato paste
Salt and pepper
Crispy taco shells
½ cup shredded cheddar cheese
¼ cup sour cream
½ cup shredded lettuce
1 plum tomato, seeded and small diced

Brown the ground beef in a sauté pan on medium heat, breaking it apart with a spoon as you cook it.  Once the meat is almost browned, add the spices and sauté for 1 minute.  Add the tomato paste and cook for 3-4 minutes until the paste is well mixed.  Season with salt and pepper and set aside to cool.

Pack the meat, shells and toppings individually in mini containers and place into a lunchbox so the kids can build their own tacos.
