1 pound good quality ground beef, 80/20
8 slices rye bread
4 slices of your favorite cheddar cheese
2 cups yellow onions, caramelized and very soft
2-4 tablespoons of butter
Thousand Island dressing, recipe follows
Form the ground beef into 4 thin, oval-shaped patties. Season well with salt and pepper and cook on a cast-iron griddle or pan over medium heat for 5-6 minutes on both sides.
Meanwhile, heat 2 tablespoons of the butter on the griddle pan or separate pan and toast the bread until lightly brown.
Top the toasted bread with some thousand island, then some caramelized onions.
Finally top the burger with the cheese and allow it to melt.
Place the burger on the bread, serve immediately.
Thousand Island Dressing
½ cup mayonnaise
2 tablespoons ketchup
2 tablespoons chopped pickles
2 teaspoons chopped capers
shot of tabasco
Mix together all ingredients and season to taste with salt and pepper.
