16 ounces freshly ground burger meat, 80/20, portioned into 2 ounce balls
4 slices American cheese (each slice cut in quarters)

Lay a plastic baggie or wax paper down on your work surface. Place a 2 ounce ball of meat in the middle of the bag and cover with another baggie or sheet of wax paper. Press down on the burger, forming it into a round, ¼ inch-thick patty. Set aside and repeat with remaining meat. Place 4 quarters of American cheese down in the center of a patty. Cover with another patty and seal the patties, pressing own all around to make sure it’s seamless. Set aside and repeat with remaining meat and cheese. Sear the burgers over medium heat until golden brown on both sides and cooked through. The patties should be cooked through to ensure that the cheese inside melts.
Place a patty on a toasted bun and serve with your favorite condiments and toppings! We used ketchup, mayonnaise, yellow mustard, shredded iceberg lettuce and sliced tomatoes on the show.
