Onion Rings


1 yellow or red onion, sliced into ¼-inch thick circles

2 cups buttermilk

2 cups AP flour mixed with 1 teaspoon cayenne pepper

oil for frying

Kosher salt


Heat a pot of oil or tabletop fryer to 350˚F degrees.


Place the onions in the buttermilk to soak for 2-3 minutes.  Dredge in the flour mixture making sure to coat evenly.  Shake off the excess flour and carefully lower the rings into the oil.  Fry until golden brown and crispy.  Remove and place on paper towels to drain.  Season with salt immediately.  Serve with your favorite dipping sauce.
