Dead rodent at Dunkin’, 100+ droppings at Victory

One promises 5-star meals. Another is a well-known bagel shop. And one serves millions of cups of coffee each year. But last week, Victory Restaurant & Lounge, H&H Bagels in Pinecrest, and a Dunkin’ in Miami all landed on the state’s emergency closure list after inspectors documented serious violations, including a dead rodent, dozens of live flies, and more than 100 rodent droppings.

At Victory alone, inspectors documented more than 100 rodent droppings in multiple areas, including where food was stored and clean dishes were kept.

As with all emergency closures, the shutdowns were temporary. Each restaurant was allowed to reopen after completing the required cleanup and passing a follow-up inspection.

No restaurants or food service establishments in Broward County or the Florida Keys were ordered shut last week.

“Hole in or other damage to ceiling . Observed hole in ceiling next to drive thru window. Also observed hole on wall near drive thru window.”

“Handwash sink used for purposes other than handwashing. Observed handwashing sink inside customer restroom soiled with paper residue. Employee cleaned during inspection. Also observed handwashing sink across ice machine soiled with dark substance.”

“Live, small flying insects found. Observed 30+ live flies in kitchen area on walls and clean food containers and food trays above triple sink. Observed 2 live flies in mop sink on wall next to ware wash area in kitchen. Observed next to walk in cooler in kitchen area; 3 live flies on dry storage rack on plastic to go cups.”

“Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Observed vents soiled with dust in kitchen area.”

“Raw animal food stored over/not properly separated from ready-to-eat food. Observed nova cream cheese above onions and sodas in walk in cooler. Operator removed onions from under nova.”

“Employee with no beard guard/restraint while engaging in food preparation. Overseer employee on cook line with longer facial hair needing restraint.”

“No currently certified food service manager on duty with four or more employees engaged in food preparation/handling.”

“No proof of required state approved employee training provided for any employees.”

Observed approximately 50+ droppings on top of lid of containers with rice and grits at dry storage. Observed approximately 25 droppings at racks with clean plates at second floor storage. Observed approximately 10 droppings at hookah station at counter.”

“Stop Sale issued on time/temperature control for safety food due to temperature abuse. Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cooked rice container as per chef today at 2pm, cooked rice (56F - Cold Holding), more than 6 hours. Repeat Violation.”

“Food-contact surface soiled with food debris, mold-like substance or slime. Observed cutting boards soiled across cook line prep area. Repeat Violation.”

“Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Observed near reach in freezer.”

“Accumulation of debris on exterior of ware washing machine.”

“Handwash sink used for purposes other than handwashing. Observed hand sink used as a dump sink at bar and hookah station. Observed knives and towel inside hand sink at kitchen. Repeat Violation.”
