Sugar Cookies with Chocolate Filling

½ cup plus 1 tablespoon butter softened
½ cup white sugar
½ cup light brown sugar
2 eggs
½ teaspoon vanilla extract
2½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt

In a large bowl, cream together butter and sugars until smooth.  Beat in eggs and vanilla.  Stir in the flour, baking powder and salt.  Form dough into a disk, wrap in plastic wrap and chill for at least an hour.

Preheat the oven to 400˚F.
Roll out dough on a floured work surface 1/3-inch thick.  Cut into desired size and shape using a cookie cutter.  Place cookies, one inch apart, onto a cookie tray that has been lined with parchment paper.

Bake 6-8 minutes in preheated oven.  Cool completely.
