Grilled Ribs

1 rack St. Louis ribs

For the rib cure:

½ cup salt

½ cup light brown sugar

¼ cup smoked paprika

2 tablespoons garlic powder

1½ tablespoons onion powder

½ tablespoon curry powder

For grilling:

your favorite BBQ sauce

Mix together the ingredients for the rib cure. Generously season the ribs and wrap tightly in aluminum foil, sealing the ribs to make a package. Place in the refrigerator for at least 2 hours or overnight.

After the ribs have cured, preheat your oven to 300˚-325˚F. Remove the ribs from the refrigerator 30 minutes before cooking. Place the ribs on a baking sheet and roast in the oven for 1½ -2 hours or until just tender to a knife tip. Remove from the oven. Allow to cool completely.

To cook the ribs, preheat your grill to medium high heat. Place the ribs on the grill, reduce the heat to medium-low, cook for about 10 minutes each side. After 10 minutes, brush the ribs with BBQ sauce and grill for a few more minutes to caramelize the BBQ sauce.
