Beef Sir Fry with Ramen Noodles

1 package beef ramen

neutral oil for sauteing, like grapeseed or canola, as needed

6 ounce skirt steak, cut into thin strips

½ cup snow peas, ends trimmed, cut into 1/3rds

½ cup snap peas, ends trimmed, cut into 1/3rds

3 scallions, whites and light green, thinly sliced

For the sauce:

¼ cup Oyster sauce

¼ cup Soy sauce

1 teaspoon granulated sugar

1 tablespoon Sesame oil

Cook the noodles in water until al dente, about 1 minute less than package instructions. Drain.

While the noodles cook, heat a drizzle of oil over medium-high heat in a wok or tall-sided, large sauté pan. Sauté the beef for 1-2 minutes until it begins to caramelize. Add in the snow peas and snap peas and the cooked noodles. Stir to combine then add in the sauce. You can add a little of the flavoring packet to boost the flavor if desired. Sauté for 1-2 minutes to marry flavors. Add in the scallions and serve immediately.
