Lincoln Road eatery had a problem, ordered shut

An inspector discovered a roach issue on Lincoln Road and ordered Pizza Tua shut last week.

The discovery was made during an unannounced, routine “food safety inspection.”

Meanwhile, Berta Grill Caribbean Restaurant, on Hollywood Boulevard, was ordered shut for a second time last week for a roach issue as well.

ALL the places mentioned were allowed to re-open following an ordered cleanup and re-inspection.

“Roach activity present as evidenced by live roaches found. Observed 5 live roach crawling inside empty reach in cooler located across 3 compartment sink at kitchen. Observed 2 live roaches crawling on the floor approximately 4ft from cook line at kitchen.”

“Dead roaches on premises. Observed 9 dead roaches inside a glue trap above preparation table across from hand sink at kitchen.”

“Stop Sale issued on time/temperature control for safety food due to temperature abuse. Observed pasta (69F - Cold Holding); penne (68F - Cold Holding) at reach in cooler at the back of the restaurant. As per chef cooked since 10am.”

“Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Observed ceiling vents soiled throughout the kitchen.”

“Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed microwave soiled.”

“Cutting board has cut marks and is no longer cleanable. Observed at preparation area by cook line.”

“Employee with no hair restraint while engaging in food preparation. Observed chef with no hair restraint at kitchen.”

“Equipment in poor repair. Observed reach in cooler door at back of the establishment in disrepair.”

“Floor area(s) covered with standing water. Observed standing water by reaching in coolers at kitchen.”

“No soap provided at hand wash sink.”

“No currently certified food service manager on duty with four or more employees engaged in food preparation/handling.”

“No proof of required state approved employee training provided for any employees.”

“Dead roaches on premises. Observed: - Approximately 3 dead roaches on floor in clean utensils storage area in kitchen. - 2 dead roaches on shelf holding clean utensils in storage area in kitchen. - 1 dead roach on floor between flip top and deep freezer next to cook line. - 1 dead roach on metal pan containing vegetables in flip top cooler next to cook line. - part of a dead roach on pot cover handle containing white rice in kitchen.”

“Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Hood filters soiled.”

“No running water at hand wash sink. Observed at prep area hand wash sink.”

“Required employee training expired for some employees.”
