Bleu cheese burger

Ingredients:
1 pound ground brisket
1 pound ground sirloin
4 ounces crumbled blue cheese
Maldon sea salt and freshly ground black pepper
Caramelized onions
Mayonnaise
Your favorite olive oil
Your favorite aged balsamic vinegar
4 good quality pretzel rolls

Directions:
Combine the brisket and sirloin together. To make the burgers, form 8 4-ounces patties. Make a well in 4 of the patties and divide the bleu cheese evenly between the 4 patties. Top each patty with the remaining patties and seal the edges well, season well with salt and pepper. Heat a cast iron pan to medium. Add a drizzle of oil to keep the patties from sticking and cook to your desired doneness.

Meanwhile, lightly toast the buns on a hot pan or grill and spread a little mayonnaise on the cut side. Dress the watercress with a drizzle of olive oil and balsamic vinegar. Season with salt.

Place a cooked burger on each bun, top with caramelized onions, watercress and the top of the bun. If desired, use a skewer to hold the burger together while serving.
