Dirty Dining: South Florida Panera, KFC ordered shut

Below is a list of places inspected by the Florida Department of Business and Professional Regulation last week.

Some places were issued a “follow-up inspection required” and were not ordered shut even though they had insect issues.

The department has discretion on which establishments are ordered shut and which are not, and it should NOT be that way.

All the places mentioned were allowed to re-open following an ordered cleanup and re-inspection.

“Roach activity present as evidenced by live roaches found. Observed 1 live roach on the floor by bread oven in kitchen area, also observed approximately 10 live roaches behind a cardboard box in the storage room (vacuum cleaner and light fixture )located in kitchen area.”

“Accumulation of debris inside ware washing machine. Observed dishwasher machine soiled.”

“Buildup of food debris/soil residue on equipment door handles. Food debris on shelves under the front counter.”

“Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Reach in cooler gasket soiled. Reach in coolers at front desk preparation area.”

Sewage/wastewater backing up through floor drains. Waste water coming up from floor drain next to kitchen hand sink. Water covering walkway from kitchen to walk in cooler and back storage areas and employees tracking water across floor

Employee failed to wash hands before putting on gloves to initiate a task working with food. Employees on cook line leaving kitchen, opening walk in cooler door and returning with items to line and changing gloves without washing hands first.

Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. In small chest freezer closest to back door, open pack of raw burgers above open pack of raw breaded fish. Employee moved fish to separate freezer for proper separation.

Stop Sale issued on time/temperature control for safety food due to temperature abuse. In walk in cooler, chicken soup (50F - Cold Holding); sliced cheddar cheese (51F - Cold Holding); cooked ribs (50F - Cold Holding); deli turkey (48F - Cold Holding)

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In walk in cooler, chicken soup (50F - Cold Holding); sliced cheddar cheese (51F - Cold Holding); cooked ribs (50F - Cold Holding); deli turkey (48F - Cold Holding) **Repeat Violation**

Time/temperature control for safety food removed from cold holding for necessary preparation rose above 41 degrees Fahrenheit during the preparation process and was not cooled back down to 41 degrees Fahrenheit within 4 hours. 1) In walk in cooler, blue cheese dressing 52F @ 4:20pm (prepared cooling since 11:00am). 2) At blue cheese dressing 49F @ 4:10pm (prepared 11:00am)

Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Containers of chicken soup and cooked ribs and wrapped portioned sliced provolone in walk in cooler missing date marking. Per employee soup 2 days old, ribs 3 days old, and cheese cut and wrapped yesterday morning.

Observed 2 live flying insects on wall at soda beverage machine in dining area. Observed 3 live flying insects on wall in dry storage area.”

“Roach activity present as evidenced by live roaches found. Observed 1 live roach crawling on the wall at main entry and exit door at the front of the establishment.”

“Accumulation of dead or trapped birds, insects, rodents, or other pests, in control devices. Observed 5 dead flying insects on wall in female restroom.”

“Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed potato hash in hot holding unit at 106-130°F.”

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. butter (50°F); ham (50°F); cream cheese (51°F); shredded cheese (51°F); liquid egg (51°F); white gravy (50°F); cooked sausage (52°F); bagged yogurt (48°F-52°F) being held in walk in cooler. Walk in cooler turned off at start of inspection. Monitored walk in cooler for 1 hour with no changes in temperature. Items not prepared or portioned today. Unknown time out of temperature.”

“Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. cooked potatoes (98°F - Hot Holding) being held in oven that is not hot enough to maintain proper temperature. Operator states item was reheated 3 hours ago and will be discarded in 30 minutes at the end of breakfast service.”

“No proof of required state approved employee training provided for any employees.”
