Chipotle, J.Mark's Restaurant top Dirty Dining list

POMPANO BEACH, Fla. – State inspectors recently showed up to J.Mark's Restaurant in Pompano Beach based on a complaint.

Records show 27 violations were found, including a roach issue.

A stop sale was also issued on several food items because of temperature issues.

Rodent activity was found at Lotus House in Wilton Manors and there was a wastewater issue discovered at a Chipotle in Coral Springs.

Below is a list of places ordered shut and some of their violations.

All the places mentioned were allowed to reopen following an ordered clean-up and re-inspection.

Observed approximately 8 live roaches under ice bin in wait station , 2 live roaches by the east side kitchen entryway , 3 live roaches by the hand wash sink in the cook line area , 2 live roaches in the dry storage room area, 14 live roaches under the prep table in rear prep area, 1 live roach on wall in the rear prep area , 1 live roach in the electrical box by Alto Sham in the rear prep area , 7 live roaches under prep table #2 in the rear prep area , 15 live roaches under stove in prep area, 4 live roaches by dish machine, 1 live roach by dishwashing area shelves, and 1 live roach by takeout container storage near back door area."

"Dead roaches on premises. 5 dead roaches by wait station, 2 dead roaches by ovens, and 4 dead roaches in dry storage room."

"Insecticide/rodenticide use not in compliance with regulations. Use of household only Raid."

"Stop Sale issued on potentially hazardous (time/temperature control for safety) food due to temperature abuse. Potentially hazardous (time/temperature control for safety) food cooked/heated yesterday/on a previous day not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within a total of 6 hours. Food has been cooling overnight. Cooked beef 49° F, cooked chicken 51° F, cooked wings 51° F and clam chowder 64-66° F all cooling overnight at walk-in cooler with an ambient temperature of 49° F. Foods discarded. Portioned butter 51-60° F cooling overnight at walk-in cooler with an ambient temperature of 49° F. Food discarded."

"Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Raw fish 46° F and raw beef 48° F at cold holding drawers at cook line. Iced down. corrective Action taken. Caesar dressing w/ raw shelled eggs 54° F, Cole slaw 52° F, homemade ranch 55° F all on front-line area under no temperature control. Iced down. corrective Action taken. Spinach dip 46-48° F at glass door cooler in front line area with ambient temperature of 48° F. Moved to working cooler. Tomatoes 52° F, sauce 51° F, eggs 54° F, cream sauce 52° F, roasted chicken 50° F , tomato sauce 50° F, and turkey 49° F all at flip top cooler at end of cook line on the west side. Foods iced down and moved to working coolers. Corrective Action taken. Overs stacked Cabbage 60° F and over stacked cut lettuce 62° F at cook line flip top cooler at end of cook line on east side . Steve Wilson, CEO of J. Mark's Restaurant, released the following statement to Local 10 News:

 

"At J. Mark's Restaurant we are committed to providing a clean and healthy environment, which is our top priority to ensure a healthy environment for our guest and employees. Our Pompano location has always received high health scores and corrected any actions immediately.

When we learned of the issue concerning our big walk in cooler temperature, we took immediate steps to have it fixed and additionally had an extensive 12-hour deep clean of the restaurant with additional maintenance to ensure the issue was resolved. For our guest’s safety, we temporarily shut down the restaurant Friday during dinner due to food not temping correctly as a result of the cooler not working.

In regards to the bug situation, as soon as we learned of the issue it was immediately addressed and corrected. Upon the visit the following day for re-inspection, there were zero violations found on our property."

"Raw chicken stored over cooked chicken in walk in cooler. Operator reversed items."

"Stop Sale issued on potentially hazardous (time/temperature control for safety) food due to temperature abuse. Observed cut lettuce and tomatoes at 44-47°F in walk in cooler; date marked from 01/08/17."

"Cooked meats or poultry hot held at less than 135 degrees Fahrenheit or above. Observed steak at 122-130°F, was reheated by cook to 165°F."

"Employee failed to wash hands before changing gloves and/or putting on gloves to work with food. Observed worker change gloves without washing hands and then cut cooked chicken with gloves intact."
