Sushi bars to burger chains - why inspectors had to step in

Records show inspectors with the Florida Department of Business and Professional Regulation ordered closures at four eateries across South Florida following serious safety violations.

At Suri Sushi Thai in Weston, nine violations were found, including improper food storage, lack of time-temperature controls, and the presence of small flying insects at the sushi bar. Many of the violations were repeat violations.

In Key West, a Wendy’s was shut down after inspectors found the only restrooms torn out during ongoing renovations, leaving staff and patrons without bathroom access.

Sunshine Bistros in Lauderhill racked up 11 violations, including live and dead roaches under prep tables and improper food cooling methods.

Tu Concinita Catering in Hialeah was shut down after inspectors found live roaches beneath a sink while the business was preparing food for delivery.

All the places mentioned were allowed to re-open following an ordered cleanup and then a re-inspection.

“Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. Observed at reach in freezer (duckers) in kitchen - raw chicken (not commercially packaged) stored over ice cream. Operator stored correctly. Repeat Violation.”

“Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed at chest freezer in kitchen across from main grill - raw chicken (not commercially packaged) stored over raw beef (not commercially packaged).”

“Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed at flip top cooler across from fryer - shrimp (52F - Cold Holding) as per operator item not portioned or prepared today. Item held out of temperature for approximately 1 hour. Repeat Violation.”

“Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. See stop sale. Observed at sushi bar - sushi rice without time mark, as per operator, item held for approximately 1 hour. Repeat Violation.”

“Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed on counter at sushi bar - tempura shrimp (75F - Hot Holding) as per operator item held out of temperature for approximately 1 hour. Operator discharged at will. Observed container of white rice (111F - Hot Holding) next to grill, as per operator item held out of temperature for next order of fried rice. Held out for approximately 1 hour.”

“Food being cooled by non- approved method as evidenced by inadequate rate of cooling during time of inspection. Observed at flip top cooler across from fryer - boiled eggs (68F - Cooling at 13:55pm, cooling since 11:30am - 63F at 14:15am).”

“Hand wash sink used for purposes other than handwashing. Observed utensils stored in sink at sushi bar.”

“Plumbing system in disrepair. Observed the entire bathroom plumbing system has been completely removed.”

“Dead roaches on premises. Approximately four dead roaches in kitchen area underneath prep table and around mop sink. 1 dead roach in hallway leading to kitchen operator removed roaches and began sanitizing area.”

“Food being cooled by non- approved method as evidenced by inadequate rate of cooling during time of inspection. Asber cooler at 11:25 pikliz 50F ambient cooling for 1 hour to 50F at 12:20pm cooked chicken sauce 52 ambient cooling for 1 hour to 51F 12:15pm. At this rate proper cooling to 41 F in four hours will not occur.”

“Interior of oven/microwave has accumulation of black substance/grease/food debris. Microwave in kitchen soiled with food debris. Operator began cleaning microwave.”

“Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Hood filters soiled at kitchen cook line.”
