The Aug. 28 inspection marked the bakery’s third failed check in less than a month, according to the Florida Department of Agriculture and Consumer Services.

Inspectors said droppings were found on the kitchen floor, in a mop sink, behind storage bins, inside the bowl of a floor mixer and on sheet pans stored on a rack.

The bakery had already been under Stop-Use and Stop-Sale orders following inspections on July 30 and Aug. 14, which also documented pest activity. The latest inspection confirmed those orders remain in place.

Other violations included no paper towels or hand-drying device in the restroom, no written cleanup procedures for vomit or diarrhea, an expired food manager certification, grease buildup on pans, a restroom door that did not close on its own and water-stained ceiling tiles.

The agency warned that if the issues are not corrected by the next inspection, expected around Sept. 11, the bakery could face suspension or revocation of its food permit, as well as fines.

Until the state signs off, Lubin’s Classic Bakery cannot sell or move any food products. Inspectors also ordered the business to put a pest management program in place.
