2 cups Moroccan couscous

2 cups Italian parsley leaves, very finely chopped

2 cups Cucumbers, small diced

2 cups Tomatoes, cored and small diced

¼ cup Scallions, sliced thin

1 Garlic clove, minced

¼ cup Lemon juice, freshly squeezed

½ cup Mint leaves, picked and finely chopped

2 tablespoons Really good extra virgin olive oil

kosher salt and pepper, to taste

Place the couscous in a large bowl, toss with 1 tablespoon olive oil, salt and pepper. If you want to add any of your favorite spices like cinnamon, turmeric or cumin, by all means. Boil some water and cover the couscous just until the very top of the couscous in the bowl. Cover with plastic wrap immediately and allowed to steam for about 20 minutes. Remove the plastic wrap and fluff with a fork. Allow the couscous to cool and toss with all the other ingredients and salt and pepper to taste.
