Mojo Marinated Turkey Breast

For the Turkey:

1 turkey breast, rinsed and patted dry

turkey bag, for roasting

For the Mojo Marinade & Sauce for Serving:

½ cup Olive oil

2 large red onions, julienne (cut into thin strips)

½ cup thinly sliced garlic

1 tablespoon Goya Adobo, all-purpose seasoning

2 cups sour oranges, juiced or 1 cup of lime juice and 1 cup orange juice

1 cup cilantro leaves and tender stems, chopped

Make the Mojo Marinade:

Cook the onions and garlic in the olive oil until tender and translucent but not browned. Add the Adobo, sour orange juice and cilantro, seasoning well with salt and pepper. Simmer for 4-5 minutes to marry the flavors. Cool completely before marinating your turkey. Reserve half of the mojo marinade for serving.

Marinate the Turkey:

Place the turkey in the roasting bag. Pour HALF of the mojo over the turkey. Close the bag and place in the refrigerator to marinate overnight.

Roast the turkey:

Preheat your oven according to suggested instructions for the turkey bag (we preheated our oven at 350˚F.) Place the turkey in a roasting pan and cook until a thermometer inserted into the thickest part of the thigh reads 165 F degrees. Remove the turkey and let rest for 15-30 minutes before carving. Warm the mojo just slightly before serving alongside the turkey.
