Waldorf Salad

You can also add pulled roasted or rotisserie chicken to this recipe to bump up the protein!

¼ cup whole milk Greek yogurt

2 tablespoons of your favorite mayonnaise

1 tablespoon lemon juice, freshly squeezed

1 teaspoon honey

¾ teaspoon sea salt

freshly ground black pepper

2 tart apples, such as Granny Smith or honeycrisp, chopped

2 cups thinly sliced celery, 3 to 4 ribs, plus celery leaves for garnish

1 cup green grapes, halved

1 cup walnuts or pecans, toasted and chopped

⅔ cup chopped fresh parsley, plus more for garnish

In a large bowl, whisk together the yogurt, mayonnaise, lemon juice, honey, salt and several grinds of pepper.

Add the apples, celery, grapes, walnuts, and parsley and mix to combine.

Season to taste and transfer to a serving platter. Garnish with more parsley and celery leaves and serve.
