Fish Ceviche with Passion Fruit
For the fish:

-½ - 1 pound freshest white fish available, like snapper, corvina or cobia, cut into small chunks or short strips
-kosher salt, to taste
For the Ceviche base:
-½ cup chopped celery
-¼ cup chopped yellow onion
-8 sprigs cilantro
-heavy pinch salt
-1 cup ice water
-2 slices peeled ginger
-half of a habanero chili, seeded
For the Ceviche:
-½ cup lime juice, freshly squeezed
-½ cup passionfruit pulp
-½ cup cherry tomatoes, cut in half
-¼ cup cilantro leaves and tender stems, chopped
-shaved red onion, as desired
To make the ceviche, place the fish in a bowl set over a bowl of ice. Season the fish with a generous pinch of salt.
Combine all ingredients for the ceviche base in a blender and puree until smooth. Mix with the lime juice and passionfruit juice. Taste. Pour over the fish and mix. Add the tomatoes, chopped cilantro and red onion. Stir and taste for seasoning.
