18 wooden skewers

18 Oreo cookies

neutral oil for frying, like peanut, grapeseed or canola

1 cup all-purpose biscuit or baking mix

1 large egg, room temperature

½ cup milk, more as needed to thin the batter

confectioner’s sugar, for dusting

Thread 1 cookie on a skewer, inserting the pointed end into the filling. Continue until all of the cookies have been skewered. Freeze until firm, about 1 hour.

In a deep cast-iron skillet or deep fryer, heat oil to 375˚F. Place biscuit mix in a shallow bowl. In another bowl, combine egg and milk; whisk into biscuit mix just until moistened. If needed, add a splash of milk to thin the batter until enough that the cookie can be dipped and excess batter can drip off.

Holding the skewer, dunk the cookie into the batter, coating both sides; shake off excess.

Fry cookies, a few at a time, until golden brown, 1-2 minutes on each side. Drain on paper towels. Dust with confectioners’ sugar before serving.
