Jerk Tofu

Jerk Tofu

1 block firm tofu

1 tablespoon corn starch

2-3 tablespoons jerk marinade or paste (recipe follows)

2-3 tablespoons of your favorite bar-be-que sauce

2-3 tablespoons ketchup

2 tablespoons oil for frying

Cut the tofu in thin slices and boil in salted water for 5 minutes. Strain and allow the tofu to cool.

Toss the tofu in the jerk marinade and then shake a little cornstarch all over the tofu.

Heat a large nonstick pan with the oil and sauté the tofu over medium heat until caramelized. Add the rest of the ingredients along with about 1 cup of water. Cook stirring for a couple of minutes until the sauce reduces and coats the tofu. Season with salt and pepper.

For the jerk paste:

4 scotch bonnet peppers, stemmed

½ large red onion

6 cloves garlic

5 scallions

¼ cup white vinegar

¼ cup soy sauce

1½ teaspoons sea salt

1 tablespoon ground black pepper

1 tablespoon grated ginger

2 tablespoons all spice berries (whole)

2 tablespoons brown sugar

1 teaspoon ground nutmeg

2 tablespoons vegetable oil

7 sprigs of fresh thyme

juice of 1 lime, freshly squeezed

Combine all ingredients and puree until smooth.
