Tuna Tartar Bites on Toasty Brioche Topped with Caviar
For the Tuna Tartare:
6 ounces Sushi-Grade tuna, chopped overly fine (it should look almost like it’s ground)
1 shallot, minced
1 tablespoon chives, sliced thin
1 tablespoon Kewpie mayonnaise
1 teaspoon soy sauce
½ teaspoon sesame oil
pinch of Salt
For the Toast & Garnish:
4 thick slices of brioche bread
2 tablespoon butter
olive oil, for toasting
your favorite caviar
toasted Sesame Seeds
Toast the brioche:
Cut brioche into squares. Toast them in the butter and a drizzle of olive oil until golden and crispy on all sides. Drain on a paper towel.
Make the tartar:
Gently combine the diced tuna, shallot, chives, mayonnaise, soy sauce, and sesame oil.
Assemble:
Place the toasted brioche squares on the plate. Top generously with the tuna tartare.
Garnish with caviar and toasted sesame seeds.
