Tomato Salad with Whipped Feta & Tahini
For the whipped feta:
1 cup crumbled feta cheese
½ cup Greek yogurt 1 lemon, juiced
½ cup of your favorite tahini2 tablespoons water (if needed)salt & pepper to taste
For the salad:
1 pound mixed ripe tomatoes, cored and roughly chopped
½ head radicchio, chopped
fresh oregano leaves, optional garnish
2 tablespoons extra virgin olive oil
salt & pepper to taste
To make whipped feta and tahini, combine feta cheese, Greek yogurt, HALF of the lemon juice and the tahini in a food processor. Blend until smooth. Season to taste with salt and pepper, adjust lemon as desired. If the dip is too thick, add 1-2 tablespoons of water to loosen it and blend again. If it’s too thin, add 1-2 tablespoons more tahini or feta.
Place the radicchio on the base of a salad bowl, top with tomatoes. Spoon 3 scoops of whipped feta dip over the top of the salad.
Drizzle with the oil, season with salt, pepper and a garnish with fresh oregano leaves, if desired.
