New chef turns up the heat at Kaseya Center’s 601 in Miami

MIAMI – A new chef is turning up the heat at the Kaseya Center in Miami.

He’s created a new menu that is elevating what we consider sports arena food.

If you remember, Gloria Estefan’s Bongos at the arena, then you’ll know exactly where to find Chef Juan and 601.

It’s the same location, but has been completely renovated and now has a new chef who’s created a mouthwatering menu.

They have completely new menu offering elevated dishes and drinks before, during and after the games.

They’re serving up arena-style food with a Latin and Asian twist.

“Everybody has their own ways that they want to give back to the community, so mine is through food,” Chef Juan Prieto told Local 10.

Chef Juan is a Miami native and is living his dream, becoming this season’s executive chef at 601.

He says cooking is in his blood.

“I fell in love with cooking thanks to my grandma and my aunts. I have a big family, a lot of young cousins. They turned us into prep cooks,” he said.

The menu is loaded with flavor, and Chef Juan showed us the playbook behind some fan favorites, like the plantain crusted chicken sandwich.

The sandwich is complete with toasted bread, chipotle honey mustard, arugula and cherry tomatoes, along with a side of fries.

The nachos encendidos are also a must try.

It has wonton chips that are made fresh daily- and smoked ropa vieja.

“This is one of the dishes that when it goes out to the dining room, we want it to catch people’s attention,” Chef Juan said.
