Inspector orders Waffle House shut due to numerous violations

Below is a list of places that were inspected by the Florida Department of Business and Professional Regulation last week in South Florida.

Some places were ordered shut, while others were warned and require a follow-up inspection.

The department has discretion on which establishments are ordered shut and which are not, and it should NOT be that way.

Many of the places have very similar violations, if not the same, but the penalties are different due to a lack of standardization in the process.

All the places that were ordered shut were allowed to re-open following an ordered cleanup and re-inspection .

Front counter Delfield reach in cooler- observed chocolate milk 46 degrees F. Operator stated chocolate milk was inside reach in cooler since 02/23/2023 2p.m. and hasnā€™t been moved.ā€

ā€œObserved Hand-wash sink used for purposes other than hand washing. As a dump sink and a prep sink to catch pitcher of water for cooking rice.ā€

ā€œIncorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the three-compartment sink and/or dish machine. Observed no chlorine test kit available.ā€

ā€œEmployee has not received adequate training related to their assigned duties as evidenced by the inability to answer basic food safety questions. Observed food employee unaware of how to calibrate probe thermometer.ā€

ā€œQuaternary ammonium sanitizer not at proper minimum strength for manual ware washing. Do not use equipment/utensils not properly sanitized. Observed quat sanitizer in three compartment sink at 100ppm. Employee corrected to 200ppm.ā€

ā€œTime/temperature control for safety food reheated for hot holding not reaching 165 degrees Fahrenheit for 15 seconds within 2 hours. Observed at steam table black beans (93-105Ā°F - Reheating) since 8:00am, at 9:40am; quinoa (94Ā°F - Reheating)since8:00am, at 9:40am; lentils (87-93Ā°F - Reheating)since 8:00am, at 9:40am. At this rate, foods will not reach 165Ā°F within two hours. Advised operator to reheat foods to 165Ā°F in oven. Repeat Violation.ā€

ā€œEmployee touched soiled surface and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed employee touch cell phone, touch wallet, and then return to handle food without washing hands and changing gloves. Educated employee on proper hand washing procedures. Employee removed gloves and washed hands.ā€

ā€œTime/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. -At 10.00 a.m. Observed oxtail hot held in oven at 112 degrees Fahrenheit. As per operator, item placed in unit at 7.00 a.m. . Advice operator to reheat item to 191Ā°F and place in steam table. At 10:15, observed ackee and fish hot held at 108Ā°F at front line. As per operator, items placed in unit at 8:15 a.m.. Operator to reheat item 182Ā°F.ā€
