PEMBROKE PINES, Fla. — State inspectors ordered Las Cazuelas Mexican in Pembroke Pines shut down after finding roach activity in the kitchen, including live roaches inside a cooler and another in a hand-washing sink, along with about 20 dead roaches trapped behind equipment.
Inspectors also cited temperature-abused food, including pico de gallo and guacamole, and noted a hand-washing sink with no soap available for employees.
No restaurant kitchens in Miami-Dade or the Florida Keys were ordered shut last week.

Las Cazuelas was allowed to re-open following an ordered cleanup and a re-inspection.

“Accumulation of dead or trapped birds, insects, rodents, or other pests, in control devices. Observed accumulation of approximately 20 dead roaches inside lowboy cooler traps located behind cold make table and deep fryers at cook line, in kitchen.”
“Stop Sale issued on time/temperature control for safety food due to temperature abuse. Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cold make table// pico de gallo (46F - Cold Holding). Per operator, food not prepped or portioned today; foods stored out of temperature for approximately 4.5 hours.”
“Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. 1) Observed fresh garlic in oil (70F - Cold Holding) on flat top grill at cook line. Per operator, food not prepped or portioned today; foods stored out of temperature for approximately 10 minutes. Operator put foods inside reach in cooler to quick chill. Corrective Action Taken. 2) Observed cold make table// pico de gallo (46F - Cold Holding). Per operator, food not prepped or portioned today; foods stored out of temperature for approximately 4.5 hours. See stop sale. 3) Observed cold make table// guacamole with tomatoes (44F - Cold Holding). Per operator, food not prepped or portioned today; foods stored out of temperature for approximately 3 hours. Repeat Violation.”
