Poutine with Gravy & Cheese Curds
your favorite French fries (homemade or store-bought)
For the gravy:
4 tablespoons butter
4 tablespoons all-purpose flour
2-2½ cups chicken stock
2-2½ cups beef broth
kosher salt, to taste
For topping:
5-10 ounces cheese curds, depending on how big of a serving you’re making
freshly chopped tarragon
freshly chopped Italian parsley leaves
freshly chopped dill
Keep the Cheese curds at room temperature.
If using store bought French fries. Prepare according to package instructions while you make the gravy.
If making French fries from scratch, prepare the gravy and keep warm while you fry the French fries.
To make the gravy, melt the butter in a sauce pan. Add the flour and stir, cooking for 3-4 minutes to cook out the raw flour taste. Whisk in the chicken and beef broths, starting with 2 cups of each. Bring to a simmer and continue cooking, whisking, until the mixture thickens. If you like a thinner gravy, you can add a little more broth. If you like a thicker gravy, stir in a tablespoon or two of cornstarch slurry and whisk, while simmering, to thicken the gravy. Season to taste with salt.
Arrange the cooked fries on a serving platter (or baking sheet lined with parchment or aluminum foil for easy cleanup.) Top with as much gravy as desired, cheese curds and freshly chopped herbs.
Serve immediately.
