Guava Glazed Ham

8 pound-bone-in spiral sliced ham

1 cup guava paste

3 tablespoons whole grain Dijon mustard

2 tablespoons brown sugar

juice of 4 oranges

2 tablespoons apple cider vinegar

¼ teaspoon ground cinnamon

¼ teaspoon ground black pepper

1 teaspoon kosher salt

Preheat the oven to 325°F. Place the ham cut-side down in a roasting pan. Score the top in a diamond pattern if not already sliced. Cover tightly with foil. Bake the ham until warmed through.

Meanwhile, in a small saucepan over medium heat, combine the guava paste, mustard, brown sugar, orange juice, cider vinegar, cinnamon, salt and pepper. Stir and simmer for 3-4 minutes until the guava paste melts and the glaze is smooth and glossy. Remove from heat.

Brush the glaze generously over the entire ham. Return to the oven, uncovered, and bake for 25-30 minutes, brushing with glaze every 10 minutes, until deeply caramelized.

Remove from the oven and let rest for 15 minutes before serving. Brush with any remaining glaze.
