Sabayon or zabaglione


4 egg yolks
¼ cup granulated sugar
¾ cup sweet Marsala wine
1½ cups whipped cream

Whisk together the egg yolks, granulated sugar and Marsala in a large mixing bowl. Once combined, set the bowl over a pot of barely simmering water. The bottom of the bowl should not touch the water.

Continue whisking for 3-5 minutes or until the mixture is pale, coats the back of a spoon and doubles in volume. Remove from the heat. Cool the mixture in the refrigerator until well chilled. Gently fold in the whipped cream. Serve over your favorite fruit or berries. It's also great all by itself.
