1 lemon, cut in half

Add the lemon into the bird's cavity. Season the cavity heavily with salt and pepper.
Allow the chicken to sit at room temperature for at least an hour before roasting.
Truss the chicken or at least tie the legs together and tuck the wing bones under the bird.
Season heavily with salt and pepper.
Roast the chicken in a 400-degree oven for 50-60 minutes or until the chicken's internal temperature reached 170 degrees and the juices run clear. Allow the chicken to rest for 15 minutes before slicing.
