Steamed yuca



Place 1 package of frozen yuca into a steamer, cook for about 20-30 minutes over medium high heat until very soft



¼ cup Olive oil

6 cloves garlic, sliced very thin

juice of 4 limes

juice of 1 orange

pinch of cumin

¼ cup fresh cilantro, roughly chopped

½ red onion, julienne very thin



Warm the oil in a sauté pan over medium heat; add the garlic, delicately shaking the pan until it just starts turning golden in color.  Shut off the heat and immediately add the other ingredients and a heavy pinch of salt. Pour over the yuca and serve.
