Kale Salad



2 bunches of curly kale, chopped very, very fine, stems removed

½ cup dried cranberries, pulsed in a food processor for 15-30 seconds

¼ cup finely grated parmesan

1 Granny Smith apple, cut into 1/8-1/4 inch diced pieces

¼ cup sunflower seeds, toasted and salted Lemon vinaigrette to taste, recipe below

Salt to season


Combine all ingredients in a large bowl except for lemon vinaigrette and salt.  Mix to combine.  Dress with desired amount of dressing and season to taste with salt.

¼ cup extra virgin olive oil

juice of 1 lemon

salt and pepper
