Mango Salsa

Serves four

Ingredients:

1 cup black beans (cooked until tender)

1 ripe mango, small diced

1 tablespoon scallions, sliced

¼ habanero pepper, minced

½ red onion, small diced

2 tablespoons cilantro, chopped

2 limes, juice only

2 tablespoons olive oil

salt and pepper

Directions:

Combine all ingredients and mix together. Season to taste with salt and pepper.
