Stone Fruit Bruschetta with Truffle Cheese

3-4 of your favorite Stone Fruits, pitted and cut into 1/3rds
Olive oil for tossing
Salt, to taste
Pepper, to taste
1/8 teaspoon chopped thyme
1/8 teaspoon chopped rosemary
Hearty bread for grilling, we used a cranberry walnut
Truffle cheese, sliced thin
Extra Virgin olive oil, for garnish
Sea salt, for garnish

Prepare the grill; place a rack over the grill, heat over medium high.
Toss the cut stone fruit with a little olive oil, salt, sugar and fresh chopped rosemary and thyme and place on the rack to grill for a few minutes, just until the fruit it tender and slightly browned.

Meanwhile, cut 4 ½-1 inch thick pieces of your bread, drizzle with a little oil and place on a grill over low heat to warm though.  Top the bread with the cheese and place into a 325˚F oven just until the cheese begin to melt, 2-3 minutes.  Top with the grilled fruit and some extra virgin olive oil and sea salt.
