Roasted Pork Shoulder

"The Father Of All Days"

1 pork butt, bone-in, about 8-10 pounds

Kosher salt and pepper

 

Season the pork well.  Place on a roasting rack set in a roasting pan.  Roast in a 250°F oven for 8 hours; remove and rest for up to 3 hours.

Raise you oven temperature to 450°F and place the pork back into the oven uncovered for 15-20 minutes or until the skin is crispy and golden brown. 

Serve with your favorite bbq sauce.
