South Florida bakery ordered to cease operations and clean up

An inspector with the Florida Department of Agriculture and Consumer Services was at Piment Bouk Florida Bakery Monday and ordered management to cease operations.

According to state records, there was a rodent issue among other serious issues.

Live larva was spotted crawling on a large bag of flour in a storage area at the RT Mart in Florida City.

That Food Mart is located inside a Chevron gas station.

Both places will be re-inspected within 14 days.

“Bread Prep Area: Can of wasp & hornet killer and a bottle of roach and ant killer stored directly above prep sink next to hand wash sink.”

“Oven room Area: Food items stored inside walk-in cooler including fish and oatmeal cooked on Saturday found without proper date marking.”

“Backroom Area: Trays of ground beef stored in walk-in cooler cooked on Saturday found without proper date marking. Fish was voluntarily discarded due to another violation. Ground beef was properly dated during inspection.”

“Oven Room Area: Food items stored inside walk-in cooler including cooked fish, cooked oatmeal and fish pastries found with temperatures between 44 - 45 degrees F when checked with an accurate probe thermometer. COS: Food items were voluntarily discarded during inspection.”

“Oven Room Area: Walk- in cooler unable to maintain TCS (time/temperature control for safety) food items at 41 degrees F of below and found with ambient air temperatures between 44-45 degrees F when checked with an accurate probe thermometer. Stop Use Order issued.”

“Food Service Area: Food employee not wearing effective hair restraint while working with open food items.”

“No employee health policy implemented at food establishment to report information as related to symptoms or diagnosis of diseases that are transmissible through food. Employee health guide and reporting agreement provided.”

“A pattern of non-compliance was observed as evidence by violations for improper hand washing, cold holding temperatures, sanitization, lack of written procedures for vomit & diarrhea cleanup, and lack of food allergen awareness.”

“Demonstration of knowledge not in compliance as evidenced by unavailable certified food protection manager certificate, priority violations observed, and person in charge not answering relevant food safety questions correctly.”

“”Back Room Area: observed harborage condition throughout food establishment with old unused and unclean food storage shelves and equipment along with boxes making it unable to control or eliminate the presence of pests.”

“Food Service Area: observed old food residue on in use metal tongs stored inside open self-serve pickled eggs container. COS, Food Establishment has agreed to discontinue the use of tongs and will no longer serve open foods at establishment. All product was voluntarily discarded by management and utensils were removed from service.”

“Food Service area, observed multiple dead roaches on service counter, next to unused hot box.”

“No Certified Food Protection Manager at Food Establishment.”
