4 restaurant kitchens ordered shut; 2 for rodent issues, 2 for roach issues

Below is a list of places that were inspected last week by the Florida Department of Business and Professional Regulation.

All the places ordered shut were allowed to re-open following an ordered cleanup and re-inspection.

“Rodent activity present as evidenced by rodent droppings found. Observed approximately 70 rodent droppings on top of the shelves in dry storage room next to kitchen.”

“Roach activity present as evidenced by live roaches found. Observed 4 live roaches on shelves in dry storage room, observed 5 live roaches under preparation table in kitchen area.”

“Dead roaches on premises. Observed approximately 12 dead roaches under shelves by triple sink, approximately 10 dead roaches on top of the water heater, approximately 8 dead roaches under preparation table in kitchen area.”

“Sewage/wastewater backing up through floor drains. Observed waste water from triple sink backing up through floor drain in kitchen area.”

“Interior of oven/microwave has accumulation of black substance/grease/food debris. Oven soiled.”

“Walk-in cooler/freezer shelves with rust that has pitted the surface. Walk in shelves rusted. Repeat Violation.”

Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Cooked: chicken, liver, pork held for more than 24/hrs. without date marked inside walk-in cooler. Repeat Violation.”

“No soap provided at hand wash sink. Hand wash sink by triple sink.”

“Operating with an expired Division of Hotels and Restaurants license. Expired since 10/1/2023.”

“Rodent activity present as evidenced by rodent droppings found. Observed 15 rodent droppings on top of dish machine, 10 droppings on slicer table and under slicer, 5 droppings on wood shelf above food storage, in the triple sink area.”

“Accumulation of lime scale on the inside of the dish machine.”

“Unnecessary items/unused equipment on the premises. Old equipment, dirty sheet pans, boxes stored outside the back of restaurant.”

“Dish machine chlorine sanitizer not at proper minimum strength. Discontinue use of dish machine for sanitizing and set up manual sanitization until dish machine is repaired and sanitizing properly. 0 ppm chlorine at dishwasher. The sanitizer container is empty.”

“Hand wash sink not accessible for employee use at all times. Blocked by table and tray of bacon laying on hand wash sink.”

“No currently certified food service manager on duty with four or more employees engaged in food preparation/handling.”

“Dead roaches on premises. Kitchen area. -6 dead roaches under prep table next to stove. 2 dead roaches on floor, under fryers. 7 dead roaches, next to storage of granulated sugar bags, next to back entrance door.”

“Accumulation of debris in three-compartment sink.”

“Floor soiled/has accumulation of debris. -cook line- under equipment and flip tops. -under triple sink -under dry goods storage area.”

“Hand wash sink used for purposes other than hand washing. Cook line, plastic container inside sink, employee removed.”

“No soap provided at hand wash sink.”

“Roach activity present as evidenced by live roaches found. Observed 5 live roaches on the gaskets of Frigidaire reach in at cook line.”

“Buildup of food debris/soil residue on equipment door handles. on walk-in cooler and freezer.”

“Floor not cleaned when the least amount of food is exposed.”

“Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed legumes (115-125F - Hot Holding); goat (117-121F - Hot Holding) per operator held less than 4 hours. Operator moved to stove to reheat. Repeat Violation.”

“Dish machine chlorine sanitizer not at proper minimum strength. Discontinue use of dish machine for sanitizing and set up manual sanitization until dish machine is repaired and sanitizing properly. Observed chlorine 0 ppm. Operator primed rechecked 0 Ppm. Repeat Violation.”

“Operating with an expired Division of Hotels and Restaurants license. Expired December 1, 2023.”
