Easy Apple Crisp with Oat Topping

8 cups mixed apples, peeled, cored, cut into 1-inch chunks (we used Honeycrisp and Granny Smith)

6 ounces (about 1 cup, 2 tablespoons) dried cherries

½ cup granulated sugar

¼ cup cornstarch

juice of one lemon

1 teaspoon vanilla

Oat crisp topping:

1½ cups old fashioned oats

½ cup AP flour

½ cups light brown sugar, lightly packed

½ cup granulated sugar

4 ounces butter

Preheat your oven to 375˚F.

Mix together everything for the apples in a large bowl. Transfer to your baking dish, spreading the mixture out evenly.

Make the oat crumble:

Combine everything for the oat crisp topping in a bowl. Using your hands, work the butter into the mixture until it holds together when squeezed, like wet sand. No butter pieces should be larger than a pea.

Top the apples with the oat crumble, making sure to equally distribute the crumble. Transfer the mixture to a baking sheet lined with parchment paper. Bake for 45-60 minutes, until golden brown and bubbly. Let stand for at least 20 minutes before serving.
