Green Peas with Shrimp (WPLG, INC.)

Green Peas with Shrimp

1 dozen Key West Pink or Royal Red Shrimp, cleaned and deveined

1 tablespoon olive oil

1 shallot, sliced thin

2 garlic cloves, sliced thin

1 cup chicken broth

2-3 tablespoons Italian parsley, chopped

2 tablespoons dill fronds, chopped

2 tablespoons basil, roughly chopped

1 cup frozen green peas, thawed

2 tablespoons butter

juice of ¼ lemon

zest of 1 lemon

Heat the oil in a skillet over medium high heat. add the shrimp and shallots, after 30 seconds add the garlic. When the garlic is fragrant add the chicken broth, peas and herbs. Season with salt and pepper reduce the broth until the shrimp is cooked through, swirl in the butter, lemon juice and zest.
