Thai Style Cabbage Stir Fry

2 tablespoons neutral- flavored cooking oil

4-5 garlic cloves, smashed with the back of a knife

½ pound or about ½ of a small green cabbage, cored and cut into 2-inch pieces

2 Thai chilies, split in half

¼ teaspoon ground white pepper

1 tablespoon good quality fish sauce (I love Three Crabs brand)

lime wedge

kosher salt

Heat a wok over medium heat and add the oil and garlic at the same time, stirring constantly, until the garlic just turns golden. Add the cabbage, chilies and season with salt and white pepper. Raise the heat to high and toss for 4-5 minutes to stir-fry. Shut off the heat. Drizzle the cabbage with the fish sauce and the juice from a couple limes wedges, toss to combine and serve.
